Crispy fish goujons are a real favourite with children. Also known as posh finsh fingers, they can be prepared in minutes!

Ingredients
- 500g white fish fillets or salmon fillets (skinless and boneless)
- 4 heaped tbps coarse polenta / cornmeal
- 4 heaped tbsp of plain flour
- sprinkle of salt
- sprinkle of black pepper
- sprinkle of multi-purpose seasoning
- a few tbsp sunflower oil for shallow frying
- 1 egg
- 1 tbsp milk
Instructions
- Ensure the fish fillets are skinned and boned
- Drain on kitchen towel paper and cut into 2-3 inch wide pieces
- Sprinkle the salt, pepper and seasoning to the fish
- Heat the oil in a large shallow pan for frying
- Beat the egg and the milk to the egg
- Dip the fish pieces one at a time into the egg / milk mixture
- Mix the plain flour and polenta together
- Gently coat the fish with the flour and polenta and dip again into the egg wash
- Gently cover again with the polenta / flour mix. The double coating will give it a crispier texture.
- Place the dish into the pan with the hot oil and shallow fry on each side on a low heat until both sides are golden brown.
- Serve with salad or in a warmed pitta bread with ketchup
